Preheat oven to 425°F.
You’ll need 8 cups sliced apples, which translates to about 3 1/2 to 4 pounds purchased weight.
¾ cup brown sugar
3 tablespoons flour
1 teaspoon cinnamon
¼ teaspoon salt
½ teaspoon nutmeg
2 tablespoons lemon juice
Mix together, then toss in the apples.
Spray a 9 inche pie pan, one that’s about 1 1/2 inches deep, with non-stick pan spray.
It makes it easier to get slices out intact, and helps counteract any potential filling leaks.
Place crust in pan & crimp edges.
Spoon the apple filling into the crust.
Make streusel topping.
Mix the following until crumbly:
1/2 cup sugar
1/2 cup flour
1/2 cup cold butter, cut into pats
Spread the streusel on top of filling.
Put the pie in a large brown paper grocery bag.
Fold the opening closed, and secure it with staples or paper clips.
You may substitute parchment paper by stapling two pieces together to fashion a bag.
I have also folded foil over the pie & that also works fine.
The idea is to steam the pie, thereby holding in the moisture & flavor.
Put the pie in its bag (paper, foil or parchment) on a baking sheet.
Bake the pie in preheated 425°F oven for 1 hour.
Remove the baking sheet and pie from the oven, and carefully slit the bag open, watching out for steam.
Let the pie cool for an hour or so before cutting.
